Candied Pecans...not your ordinary nut

These are so yummy you won't be able to stop eating them unless of course you have self-control...which you should.

1 lb pecans

Whisk together 1 egg white, 1 tsp cold water and pour over nuts in a large bowl. In a separate bowl mix together 1 cup sugar, 1 tsp cinnamon and 1 tsp salt. Pour over nuts to evenly coat and spread in a single layer onto a cookie sheet with parchment or a silpat. Cook at 225 for an hour and stir a few times if you feel like it.

I use the 2 lb bag of pecans from Costco and just double this recipe while I am at it.

The Last couple months

Well since school started blogging stopped. I enjoy seeing other's blogs but don't think to update mine since I put most pictures on Facebook. Here are some random events from the last couple of months. I still can't figure out what is wrong with my blog so it's hard to label them since I can't see the order of the pictures. But from what I can remember I did include a picture of my new niece first that I got to go see in WA just last weekend. We also got to cheer daddy on while he ran the SC Half Marathon. We made our first homemade donuts with the donut pan my Mom gave us. We also set up Jack's toddler bed which he loves. I think there are lots of pictures of Jack since he seems to be the comedy around the house. Also we had Lukas VanDyke take some Christmas pictures so I included a funny one of the kids. Enjoy the random pictures of our family!

Busy Season

Well we are full swing into lots of activities, school being the biggest one. The kids started a Charter school this year so they go twice a week and I homeschool the other 3. Then there's AWANA, baseball, gymnastics starting next week, a morning bible study for mommy, a biblical counseling class for daddy so just about every night is accounted for the next few months. We just had Carter's 1st Little League game today and those little boys were so cute trying to figure out how to play the game.

Steve's Birthday

To celebrate Steve's birthday we went to Claim Jumper then came home and opened gifts and watch The Sound of Music with the kiddos. It was so cute because Carter really wanted to "dress up" with his long sleeve shirt and khakis for Dad's big day even though it was hot outside so we all dressed up to celebrate.
*Not sure what I did but can't get that weird link from going away and don't have the energy at to deal with it, sorry :(.

Our little Jack

My little guy is sick today but he wanted my hat and to sit and look at books.

Katy Joy

Katy is growing up so much and I just had to take a few pictures of this precious girl. She is so much fun and I LOVE being her Mom. She is very thoughtful loves to express love to others by words, cards, prayer for them, and lots of hugs. Daily I pray her heart would be more beautiful than her external and precious in the sight of God.

9 Years of being Elizabeth Roth


Wow, I can't believe I have now been married for 9 years, the time just flies. I don't know what it's like to be without my other half. Marriage continues to get better, and I can't wait to go away with my sweetheart this weekend to celebrate God's grace of each other.

9 Things I love about Steve

1. He only has eyes for me, reminds me of that regularly and expresses his love often
2. He provides for our family with great sacrifice and maintains a great testimony at work
3. He'd rather spend time with His family than anyone else
4. He is my greatest fan and encourages me in talents, goals, hobbies
5. He does daily devotions with the kids to lead them to Christ
6. He likes to run and keep in shape and encourages me to do the same
7. The excitement He has to be with God's people
8. After these 9 years together he still surprises me with things about himself that make me smile
9. He regularly esteems my role as a Mom, wife, friend, and encourages me to excel more in these roles

Jack's 2nd Birthday

Yesterday was a great blessing for me and the whole family. We celebrated our little guy's 2nd birthday. It was not so much what we did as we did not even plan a party but seeing Jack excited about everything was such a joy. He is at a fun age where he's talking and expressing his delight over everything. He said "Oh Wow" over so many things yesterday and he notices all the little details just like his Mom so it make it even more fun. He loved watching his cake being made, looking at his birthday banner, opening his presents, hearing us sing Happy Birthday over and over that day, and the list goes on. It was also fun since the older kids could participate even more and make it special for him. I am so thankful for this little blessing that is growing up so fast.
Very tired waiting for him to be delivered.

We got to see a power pole replaced early yesterday morning so we had Joy and Grant over to watch to start off our day.


Jack was so delighted to receive these balloons from my friend Joy who celebrated with us yesterday. Thanks Auntie Joy for making his day special.




We went to the mall a couple times that day. The first time we looked at the Koi ponds and did the carousel and the second we had dinner at Red Robin and did more of the rides.

Trip to the mountains

We were able to go visit my parents for several days and had a great time with my family celebrating my Dad's 65th birthday. As you can see we enjoy all his toys! Jack is now at the age that he can even ride in the go-cart or we call it the "buggy". I had a fun time going on a motorcycle ride too with my Dad and he showed me my grandfather's old cabin that I used to go to as a kid. I had been running in the area before with Steve but could not identify it since all the cabins look so different now. I am thankful for the fun memories my kids are making visiting my parents in the Sequoias where they live year round.
