Healthy Lunch

I am trying to eat more veggies and tried out this new Elizabeth creation...although I'm sure it's not original. I used whole wheat Lavash bread that I found at TJ's, but you could use a whole wheat tortilla and wrap just make sure it's a lower cal one. I spread a little mozerella and fresh spinach on it and put it in the microwave for like 30 seconds to make it pliable and wilt the spinach. For the filling I sauteed mushrooms, asparagus, red bells, onions, and zucchini in some garlic olive oil.
I then put a mound of veggies on the lavash and topped it with a couple tbs. of bruschetta, feta, and some Italian spices. I folded it like an enchilada and brushed a little olive oil on it. I grilled it in the George Forman (I pretend it's a Panini maker) or you can use another pan and do it like a grilled cheese. It was super filling and met all the requirements for a healthy lunch :). It would pair nicely with TJ's creamy tomato or roasted red pepper and tomato soup. Or you could add some eggs to it for a breakfast wrap. I also thought some Italian turkey sausage would make it super yummy if you didn't want just veggies...endless possibilities!
